Hog Rider "Kicks Ass" - Photo


Traverse City, Mich. - 08/13/2005 - One last fair picture, I promise! Gail Swed was named 2005 Homemaker of the Year at the Northwestern Michigan Fair. Swed entered several arts & crafts and baking projects in the fair. "I kicked ass," Swed said with a little giggle and smile. Along with her fair projects Swed is also an avid Harley Davidson Motorcycle rider. "I like to live my life to the fullest," said the mother of 2. Swed is riding her bike this weekend Flint, to see Willie Nelson. She said she presents him with a carrot cake every year.

When I turned this picture in everyone in the newsroom wanted to know if this was for real or a joke, it seems that the reporter never mentioned the Homemaker of Year was also a "biker chick", to use their words. They are rewriting the story now to include that one of Swed's passions is riding her hog.

Chef' Bob Lippincott’s Frosted Carrot Cake

1 1/2 cups Salad Oil
2 cups Sugar
4 Large Whole Eggs
2 1/2 cups Flour
2 teaspoons Baking Soda
1 Tablespoons Cinnamon
1 teaspoon Sea Salt
3 cups peeled, grated Carrots
1 (8oz.Can) Crushed Pineapple (drained)
1 cup Pecans, chopped

FROSTING:
8 oz, Cream Cheese, Softened
6 Tablespoons Butter, Softened
2 Tablespoons Pure Vanilla
2 Tablespoons Fresh Orange
rind (grated, Orange part only)
1 (16 oz. Box) Powdered Sugar

Combine Oil and Sugar. Add Eggs, 1 at a time,
beating well after each addition.
Sift together flour, baking soda, cinnamon and
salt. Add dry ingredients to oil mixture,
stirring thoroughly. Add carrots and pineapple,
fold in pecans. Pour into a well-greased Tube,
(Bundt) pan. Bake 1 1/4 hours (75 minutes) at
325 degrees F. Frost when cool.

FROSTING:
Beat cream cheese and butter until creamy and
fluffy. Add remaining ingredients. Spread
evenly onto cake.

Serves 16 to 20

A Variation to this great recipe is:
(I love the one above best)

Omit Pineapple and Pecans in cake.
Add 2 teaspoons allspice to batter.
(Add ½ cup chopped Pecans,
½ cup chopped Raisins, (soaked in Rum, if you like)
½ cup Coconut to Frosting.)
